Mama Cat’s Eggless Meatloaf

  • 1 lb hamburger
  • about 3/4 sleeve saltine crackers, crushed
  • 1/2 cup plain yogurt
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped celery
  • Ketchup for topping the meatloaf

Preheat oven to 350 F. Line bottom of baking dish with parchment or aluminum foil for easier clean-up, if desired. Combine a ingredients except ketchup in a large bowl. Form into a loaf and place in prepared baking dish. Top with ketchup. Bake about 1 hour or till done–juices are clear and it is not pink in the center. Let sit a few minutes before cutting.

Cheap Recipe of the Day 3-8-2025

This is a good recipe for those weeks when you’re digging change out of the couch in order to have gas money to get to work, since it uses mostly inexpensive pantry staples. Seve this with some buttered toast and you have a cheap meal. This makes enough for two adults.

Poor Folks Hamburger Casserole

1 box dry macaroni and cheese
1 lb. hamburger, browned and drained
1/2 cup chopped onion
1 can mixed vegetables, drained
1 can condensed tomato soup
1 cup shredded cheese

Preheat oven to 350 F. Lightly grease a casserole dish or baking pan and set aside.

Cook macaroni according to package directions. Drain well when finished cooking, then return to cooking pot. Stir into the hamburger the onion, mixed vegetables, tomato soup and cheese packet. Turn into casserole or baking dish. Cover and bake about 30 minutes. Remove cover and top with cheese. Bake 5 minutes more.
